Caprese Couscous Salad

This QUICK little salad comes together in less than 10 minutes and can be a lifesaver when you need a fast lunch! You can mix and match the grain or vegetables to clear out your fridge or pantry but the recipe below is my go to!

Ingredients

  • 1 cup of cooked Couscous (I like the whole grain one from Trader Joe’s
  • 1 cup of diced cherry tomatoes
  • 1/2 a cucumber diced
  • 1 avocado diced
  • 1/2 cup of diced buffalo mozzarella (this is the fresh mozzarella that comes in a log sliced or a ball)
  • 2 Tbsp. olive oil
  • 1 Tbsp. balsamic vinegar
  • Salt and pepper to taste
  • 1/2 tsp. of sugar
  • 1/2 tsp. Italian seasoning
  • Optional – Handful of fresh basil

Directions:

  1. Cook 1 cup of couscous according to package recommendations
    • I usually do it on the stove and it takes ~5 minutes
  2. Mix cooked couscous with diced vegetables and cheese
  3. Mix olive oil, balsamic vinaigrette, salt, pepper, Italian seasoning and sugar together and pour over salad.
  4. Add chopped basil.
  5. Toss to coat salad with vinaigrette and dig in!

Other variations:

  • Use quinoa instead of couscous for more protein.
  • Add additional roasted or raw vegetables. I like red onion, or roasted red bell peppers sometimes!
  • Add some spice – sometimes I’ll add a Tbsp. of fermented crushed Calabrian chili peppers. I get this jarred pepper sauce from Trader Joe’s.
